Apples are synonymous with fall, so soon the farmer’s markets, roadside stands, orchards, and grocery stores will be bursting out with apples. Being diabetic does not mean passing those apples by. Here are some great Apple recipes that are suitable for diabetics but tasty for anyone. Homemade Apple Butter is great to spread on toast, serve with pork, etc. For this recipe the diabetics should opt for the cinnamon rather than cinnamon candies. The apples and onions and the Sweet Potato Apple Bake are great side dishes served with meats.
HOMEMADE APPLE BUTTER
9 cups apples
1 cup cider vinegar
6 cup Splenda or Splenda Blend
red hot candies or cinnamon to taste
Cook apples until tender; run through a blender or food processor. In a saucepan, mix apple pulp with the vinegar, Splenda, and candies or cinnamon. Bring mixture to a boil and cook for 18 minutes. Pour mixture into sterilized jars and seal.
APPLE ONION SAUTE
4 medium firm apples, cored and sliced
3 tbsps butter
2 onions, sliced
1/2 tsp marjoram
salt to taste
freshly ground black pepper to taste
1/2 tsp freshly squeezed lemon juice
Heat butter in a large skillet. Add onions and apples. Saute over medium heat until apples and onions are tender. Season with marjoram, salt and pepper. Stir in lemon juice. Serve hot with chicken, pork chops, steak, etc.
Serves 4
SWEET POTATO APPLE BAKE
3 cups sliced, peeled and cooked sweet potatoes
2 large tart apples, sliced and peeled
3/4 cup SPLENDA
1 tbsp sugar-free maple syrup
3/4 tsp nutmeg
3/4 tsp allspice
1/4 tsp salt
Dash of black pepper
3 tbsp butter
Preheat oven to 350 degrees. Spray a 1 1/2-qt casserole dish with non-stick cooking spray. Layer half the sweet potatoes and half the apples in dish. In a small mixing bowl, combine SPLENDA with the maple syrup until blended. Add the nutmeg, allspice, salt and pepper to SPLENDA mixture. Sprinkle half the mixture over the apples. Dot with half the butter. Repeat the layers. Cover and bake 15 minutes. Remove cover and baste with juices. Bake, uncovered, 15 minutes more or until the apples are tender.
